BULL'S BLOOD SALAD WITH STRAWBERRY VINAIGRETTE

Serves 4

Ingredients:

150 g Bull’s Blood lettuce

300 g green beans

125 g strawberries

 

Strawberry vinaigrette:

125 g strawberries

2 tablespoons lemon juice

1 tablespoon olive oil

1 teaspoon Dijon mustard

1 teaspoon honey

Salt and pepper

 

Method:

Add all the ingredients for the vinaigrette into a blender and blend it until smooth and creamy. Season with salt and pepper.

Rinse and nip the ends of the beans and steam for 2-3 minutes in lightly salted water. Rinse the beans in cold water to stop them cooking.

Rinse the lettuce thoroughly and run it in a salad spinner. Mix Lettuce and beans in a bowl and arrange in a bowl or on a serving dish.

Cut the strawberries in four, arrange on the salad, and serve with the strawberry vinaigrette.
