BABY SPINACH WITH PEANUTBUTTER-FRIED CHICKPEAS
150 g baby spinach
1 can of chickpeas
2 tablespoons peanut butter
1 tablespoon oil for frying
1 teaspoon chili flakes
Salt and pepper, to taste
Rinse the spinach thoroughly and run in a salad spinner. Arrange in a bowl or on a serving dish.
Heat a frying pan to medium heat and fry the chickpeas for a few minuts. Season with salt and remove from heat.
Dice the apples.
Arrange apples and chichpeas on the spinach and sprinkle with chili flakes.
