LETTUCE BOATS WITH NOODLES, EDAMAME BEANS, CHILI & PEANUTS

Serves 4

Ingredients:

2 Heart of Romaine lettuces

100 g glass noodles

300 g edamame beans, de-frozen

1 red chili, sliced

1 dl peanuts, chopped coarsely

Soy sauce for serving

 

Method: 

Divide the lettuces into separate leaves, rinse thoroughly and run in a salad spinner. Arrange on a serving dish.

Boil the noodles according to the instructions on the package. Rinse the noodles in cold water and place in a colander before arranging in the lettuce boats.

Top each boat with edamame beans, chili, peanuts, and serve with soy sauce in a separate small bowl.
