ROMAINE SALAD WITH GRILLED CORN & FETA CHEESE

Serves 4

Ingredients:

1-2 Romaine lettuces (depending on the size)

3 corn-on-a-cob

100 g feta cheese

Olive oil

Salt and pepper

 

Mustard vinaigrette:

2 tablespoons lemon juice

1 tablespoon olive oil

1 teaspoon honey

1 teaspoon Dijon mustard

Salt and pepper

 

Method:

Rub the corn-on-a-cob with olive oil, season and grill for a few minutes on each side.

Whisk the ingredients for the vinaigrette together and season with salt and pepper.

Cut the Romaine lettuce in broad slices. Rinse thoroughly and run in salad spinner. Turn with the vinaigrette and arrange in a bowl or on a serving dish.

Slice the grilled corn-on-a-cob, arrange on the lettuce and sprinkle with feta cheese.
